One morning, I woke up at 4:30 A.M. just craving fried potatoes. It was so bizarre. I ate them a lot as a child, but not as much now. I let my mind wander back to my childhood days.
My siblings and I loved it when Mom and Dad packed up our old Chevy and we did the long drive from Ohio to West Virginia to see family. Our Mamaw was always waiting for us with a smile on her face and food on the table. Mamaw fried practically everything, and we loved it!
Anyway, I started thinking about the potatoes that she would fry up for us. I remembered how my cousin Lisa and I would laughingly call them ‘fried taters’ as we devoured them. Then… Ding, Ding, Ding! The idea for “Fried Taters” came to me.
